Tequila is made from the "agave tequilana weber" also known as weber blue agave and they can take between eight and 12 years to harvest.
More than 200,000 years ago, the Volcán de Tequila erupted in present day Guadalajara, leaving the soil rich in basalt, iron, sulfur and nitrogen - a perfect terrior for the Blue Weber agave plant.
In 1974, "Tequila" became intellectual property of Mexico.

Like Champagne, cognac and some fine wines, tequila can only be produced in five regions in Mexico: Guanajuanto, Michoacán, Nayarit, Tamaulipas, and Jalisco.

The hearts of the plant, also known as the piñas, are cut out, cooked, ground down and fermented to make tequila. Once the agave plant is harvested, a new one must be grown in it's place.

Blanco
typically unaged or sometimes "rested" for a month or two to help smooth the bite of the liquor.
Reposado
"Rested" is aged in barrels for anywhere from two months to a year.
Añejo
aged from one to three years.

not yet recognized by the CRTaged tequila or blend of aged tequilas that has been filtered to remove the majority of the color.
