Rum and Coke Ribs

Ingredients

Rum & Coke BBQ Sauce
1 12 oz can of Coke
Juice from ½ lime
¼ cup orange juice
½ tsp allspice
1 cinnamon (canela) stick
¼ cup cornstarch
¼ cup water
½ cup spiced rum (Captain Morgan’s or Meyers’s)
½ cup BBQ sauce (your favorite)
BBQ Ribs 2 racks baby back ribs – each approximately 1.5 pounds Salt & pepper as needed (or your favorite BBQ seasoning) Rum & Coke BBQ, chilled 1 cup water

PROCEDURES

Rum & Coke BBQ Sauce

Combine coke, lime juice, orange juice, allspice and cinnamon in a small pot and bring to a boil; reduce heat and simmer for 2 minutes.

Combine cornstarch and water and add to the simmering liquid; continue to simmer while stirring with a whip for 5 minutes, then cut heat.

Add rum and BBQ sauce, strain and refrigerate.


BBQ Ribs

Season ribs generously with seasoning and baste with rum & coke BBQ sauce.

Place ribs on a sheet tray, both should fit on one, with the bones facing up; add approximately 1 cup of water to tray.

Wrap ribs and tray tight with plastic wrap. Yes, plastic wrap.

Then wrap it with foil, place it in the oven set at 250F for 2 ½ hours or until the ribs are tender; should you be cooking them in a convection oven reduce the cook time by 30 minutes.

When tender remove from oven, brush with rum and coke BBQ sauce and place on hot grill to give them a nice char; brush frequently while grilling and before removing the ribs from the grill.
